These are the best scrambled eggs you will ever make, so let me show you how!

The ingredients: 

Whole eggs (preferably pasture raised, bonus points if they’re from your local farmer!)

A cooking fat (such as grass fed butter or ghee)

Sea salt (to taste)

A quick note on egg quality:

Every Saturday, I go to my farmer’s market for fresh eggs from a farmer who raises his hens just outside of the city I live in on his farm. He raises his hens exactly how they were meant to be raised – proper nourishment and a lot of healthy sunshine! He’s so passionate about his hens, he actually calls them his “girls”, which makes me love the eggs even more!

The reason I share this with you is because when you use eggs from hens that have been raised and nourished properly, the yolks of the eggs will be bright orange and extremely vibrant, which is exactly how they should be! In addition to being bright orange, they will also be more nutrient rich than eggs from hens without optimal living conditions!

This is why whenever I cook eggs, they look like I’ve added cheese to them or another ingredient to make them look so orange, when actually I haven’t added anything other than salt! Quality makes a difference in not only taste and nutrition, but also appearance!

So, having said that, try to find yourself some eggs from properly raised and very much loved hens! Prioritizing quality will make these best scrambled eggs even better!

Immersion blender

Non-stick frying pan

Silicone spatula

How to make Custardy Soft Scrambled Eggs (A.K.A. The Best Scrambled Eggs Ever): 

1. In a non-stick frying pan, melt your cooking fat over very low heat. If you have a gas stove, you will likely have to use the lowest amount of heat.

2. While the fat is slowly melting, crack your eggs into a small bowl. Season with sea salt.

3. Place the immersion blender in the bowl and press it against the bottom. Turn on and blend the eggs together until they are fully blended and somewhat frothy on top.

4. Once the cooking fat has melted, give it a swoosh around the pan, then pour your eggs into the pan.

5. Using your silicone spatula, gently push the eggs around in the pan until your desired level of doneness has been reached. To get big fluffly pieces of egg, don’t push them around as much, but for smaller fluffy pieces, you’ll want to push the eggs around a little more.

6. Once the eggs have reached your desired level of doneness, remove them from the pan immediately by transferring them to your serving dish.
